i haven’t been shooting lately, but i have been cooking. maybe i’ll combine the two more often. here’s a recipe that i shouldn’t have made on the coldest day yet, but #1 ice cream is easily one of my top 3 favorite foods and #2 my ice cream maker arrived yesterday.. i couldn’t wait any longer than that.

cheesecake ice cream:
8 oz cream cheese
¼ c whole milk
1 ¼ c heavy cream
zest of 1 lemon
1 tbsp lemon juice
2/3 c sugar
pinch of salt

strawberry sauce:
250 g strawberries, hulled
1 ½ tbsp sugar
2 tsp lemon juice

cut the cream cheese into small pieces and place into a blender. add milk, heavy cream, lemon zest & juice, sugar and salt. blitz until smooth. chill for 1-2 hours. purée the strawberries in a blender with the sugar and lemon juice until smooth. press the purée through a fine strainer to remove the seeds & chill. freeze the cheesecake mixture in your ice cream maker. by the end of churning time add the strawberry sauce gradually. transfer to an airtight container and freeze for at least 4 hours before serving.
